  • 1/4 cup oat flour
  • 1/4 cup melted refined coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup berries, fresh or frozen
  • 1 1/2 tbsp pure maple syrup
  • 1 tbsp water
  • 1/2 tsp cornstarch
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 2 tbsp almond flour
  • 1/4 cup melted refined coconut oil
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, oat flour, and salt. Add melted coconut oil, maple syrup, and vanilla extract; mix well.
  3. Press the mixture into a greased 8×8 baking dish to form the base layer.
  4. In a pot, simmer mixed berries with maple syrup and water until softened; mash slightly. Stir in cornstarch and let thicken.
  5. Pour berry mixture over the base layer in the baking dish.
  6. For the crumble topping, mix oats, oat flour, almond flour, melted coconut oil, maple syrup, and vanilla extract until crumbly; sprinkle over berry layer.
  7. Bake for 25 minutes; let cool before slicing into squares.
