Ingredients
5 tablespoons unsalted butter (or coconut oil)
1/2 cup honey or pure maple syrup
1 3/4 cups mashed ripe banana (about 3 1/2 large or 5 medium bananas)
2 eggs
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon vanilla extract
2 cups (250 g) white whole wheat flour (or regular whole wheat flour or all-purpose flour)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Spray a 9 × 5-inch loaf pan with cooking spray and line it with parchment paper for easy removal.
Step 2: Melt the Butter
Melt the butter in a microwave-safe bowl or on the stove. Transfer it to a large mixing bowl if melted on the stovetop.
Step 3: Combine the Wet Ingredients
Add the honey (or maple syrup) and mashed bananas to the melted butter. Whisk until well combined, then whisk in the eggs until smooth.
Step 4: Add the Flavorings
Stir in the baking soda, salt, cinnamon, and vanilla extract. Mix until everything is evenly combined.
Step 5: Add the Flour
Add the flour and gently mix using a spatula until just combined. Avoid overmixing to keep the bread soft and tender.
Step 6: Bake the Bread
Pour the batter into the prepared loaf pan. Bake for 55–65 minutes. Check the bread after about 35 minutes and loosely cover with foil if the top begins to brown too quickly.
Step 7: Cool and Serve
Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
