  • 1 red bell pepper, diced
  • 1 medium sweet potato, chopped
  • 2 cups fresh spinach

  • 14 oz can unsweetened coconut milk
  • 4 cups vegetable stock
  • 13 oz package potstickers (vegetarian or meat-filled)

Instructions

  1. In a large stockpot, heat olive oil over medium-high heat. Sauté garlic, onion, red bell pepper, and sweet potato for about 3–4 minutes until softened.
  2. Stir in red curry paste and cook for another minute. Add coconut milk and vegetable stock; whisk until smooth.
  3. Bring to a boil, then add potstickers. Reduce heat to simmer and cook for 6–8 minutes until slightly thickened.
  4. Stir in spinach and lime juice; cook for an additional minute until spinach wilts.
  5. Serve hot, garnished with fresh cilantro.
