  • 250g all-purpose flour
  • 50g powdered sugar
  • 130g butter
  • 2 tbsp water
  • 1 egg yolk
  • 220ml milk
  • 30g sugar
  • 4 egg yolks
  • 20g cornstarch
  • 1 Tahitian vanilla bean
  • 250ml cold heavy cream
  • 400g fresh strawberries


Instructions

  1. Prepare the tart crust by mixing flour, powdered sugar, and salt in a bowl. Cut in butter until crumbly. Add egg yolk and water, then form into a ball and chill for 30 minutes.
  2. Preheat your oven to 180°C (350°F). Roll out the chilled dough and fit it into a tart pan. Prick with a fork and bake for about 25 minutes until golden brown. Cool completely.
  3. For the diplomat cream, heat milk with vanilla until warm. In another bowl, whisk together egg yolks, sugar, and cornstarch; gradually mix in warm milk. Return to heat and stir until thickened.
  4. Allow the mixture to cool slightly before folding in softened plant-based gelling agents (if using) and whipped cream.
  5. Pour the diplomat cream into the cooled crust and arrange halved strawberries on top. Chill for at least two hours before serving.
