Ingredients
- 250g all-purpose flour
- 50g powdered sugar
- 130g butter
- 2 tbsp water
- 1 egg yolk
- 220ml milk
- 30g sugar
- 4 egg yolks
- 20g cornstarch
- 1 Tahitian vanilla bean
- 250ml cold heavy cream
- 400g fresh strawberries
Instructions
- Prepare the tart crust by mixing flour, powdered sugar, and salt in a bowl. Cut in butter until crumbly. Add egg yolk and water, then form into a ball and chill for 30 minutes.
- Preheat your oven to 180°C (350°F). Roll out the chilled dough and fit it into a tart pan. Prick with a fork and bake for about 25 minutes until golden brown. Cool completely.
- For the diplomat cream, heat milk with vanilla until warm. In another bowl, whisk together egg yolks, sugar, and cornstarch; gradually mix in warm milk. Return to heat and stir until thickened.
- Allow the mixture to cool slightly before folding in softened plant-based gelling agents (if using) and whipped cream.
- Pour the diplomat cream into the cooled crust and arrange halved strawberries on top. Chill for at least two hours before serving.
