Instructions

- In a mixing bowl, beat the softened butter and sugars together until fluffy (about 2 minutes). Add in the egg, vanilla extract, and mashed sweet potato; mix until combined.
- In another bowl, whisk together the flour, cinnamon, nutmeg, ginger, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients and mix just until no flour streaks remain.
- Scoop tablespoon-sized balls of dough onto parchment-lined baking sheets, ensuring enough space between each cookie.
- Bake in a preheated oven at 350°F for 10–12 minutes or until edges are golden while centers remain soft.
- Allow cookies to cool on the pan for about 5 minutes before transferring to a wire rack.
