  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/2 tsp baking soda
  • 1/4 tsp salt


Instructions

  1. Prepare the sweet potato by piercing it with a fork and microwaving for 5–7 minutes until tender or roasting at 400°F for 45–60 minutes. Once done, scoop out the flesh and mash until smooth.
  2. In a mixing bowl, beat the softened butter and sugars together until fluffy (about 2 minutes). Add in the egg, vanilla extract, and mashed sweet potato; mix until combined.
  3. In another bowl, whisk together the flour, cinnamon, nutmeg, ginger, baking soda, and salt.
  4. Gradually add the dry mixture to the wet ingredients and mix just until no flour streaks remain.
  5. Scoop tablespoon-sized balls of dough onto parchment-lined baking sheets, ensuring enough space between each cookie.
  6. Bake in a preheated oven at 350°F for 10–12 minutes or until edges are golden while centers remain soft.
  7. Allow cookies to cool on the pan for about 5 minutes before transferring to a wire rack.
