Ingredients

  • 2 large sweet potatoes, peeled and thinly sliced
  • 4 cups kale, chopped
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup grated Gruyère cheese
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 teaspoon ground nutmeg


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice sweet potatoes; set aside.
  3. In a skillet over medium heat, sauté chopped kale with a splash of water or olive oil until wilted (5-7 minutes).
  4. Grease a 9×13 inch baking dish with olive oil.
  5. Layer sweet potato slices at the bottom of the dish, followed by sautéed kale and a portion of heavy cream mixture seasoned with salt and pepper. Repeat layers until all ingredients are used.
  6. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 20-25 minutes until golden brown.
