Ingredients

  • 4 cups strawberries
  • ½ cup water
  • ¾ cup granulated sugar
  • 4 tablespoons lemon juice
  • 1 ½ cups heavy cream
  • 16 oz mascarpone cheese
  • 2 teaspoons vanilla extract
  • 260 g ladyfingers
  • Freeze-dried strawberries (for garnish)


Instructions

  1. To make the strawberry syrup, cook strawberries with water over low heat for 5 minutes. Mash and strain through a fine sieve. Stir in sugar and lemon juice, boil briefly until thickened, then cool.
  2. Whisk together mascarpone cheese, sugar, and vanilla until smooth. In another bowl, whip heavy cream to stiff peaks and fold into the mascarpone mixture along with cooled strawberry syrup.
  3. Dip ladyfingers in the remaining syrup briefly and layer them in a serving dish with half of the mascarpone filling. Repeat layers.
  4. Cover and refrigerate for at least 6 hours or overnight.
  5. Before serving, dust with freeze-dried strawberry powder and top with sliced strawberries.
