  • 2 cups fresh or frozen strawberries, chopped
  • 2 tablespoons granulated sugar (or honey)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/4 cup honey or maple syrup (optional)


Instructions

  1. In a small saucepan, combine the chopped strawberries, granulated sugar (or honey), lemon juice, cornstarch, and vanilla extract. Cook over medium heat, stirring occasionally until it simmers and thickens, about 5-7 minutes. Remove from heat and set aside to cool.
  2. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  3. In a large mixing bowl, combine oats, flour, brown sugar, baking powder, salt, and cinnamon (if using). Add cold butter cubes; cut into dry ingredients until it resembles coarse crumbs. Stir in vanilla extract and honey or maple syrup until just combined.
  4. Press about 2/3 of the crumble mixture into the bottom of the prepared baking pan. Spoon cooled strawberry filling over the crust evenly. Sprinkle remaining crumble mixture on top and gently press down.
  5. Bake in preheated oven for 35-40 minutes until golden brown on top. Insert a toothpick into the crumble topping; it should come out clean or with few crumbs. Allow bars to cool completely in pan before slicing.
