  • 6 cups fresh strawberries (cleaned, tops removed)
  • 4 cups lemon juice (bottled, fresh, or a combination)
  • 6 cups granulated sugar


Instructions

  1. Prepare your water bath canner by filling it with water and bringing it to a simmer. Gather pint jars, lids, and bands.
  2. Puree the strawberries in a food processor until smooth and transfer to a large stainless steel saucepan.
  3. Add lemon juice and sugar to the saucepan, stirring well. Heat over medium heat until the mixture reaches 190-200 degrees Fahrenheit without boiling.
  4. Fill hot pint jars with the mixture, leaving about 1/4 inch of headspace. Secure lids fingertip tight.
  5. Process jars in boiling water for 15 minutes. Allow them to sit undisturbed for 12-24 hours or until sealed.
