Ingredients

  • 6 oz spinach
  • ¼ tsp Diamond Crystal kosher salt
  • 1 Tbsp mirin (cooked to remove alcohol)
  • 2 Tbsp toasted white sesame seeds
  • 2 tsp miso (e.g., Hikari Miso® Organic Koji Miso)
  • 1 tsp sugar
  • ½ tsp soy sauce


Instructions

  1. Bring a large pot of water to boil. Toast sesame seeds in a frying pan over low heat until fragrant, then set aside.
  2. In a small saucepan, add mirin and heat until the alcohol evaporates, then set aside.
  3. Grind toasted sesame seeds in a mortar until they have a coarse texture.
  4. Mix ground sesame with miso, sugar, cooked mirin, and soy sauce until well combined.
  5. Add salt to boiling water, then blanch spinach by cooking for 45 seconds.
  6. Transfer spinach to an iced water bowl immediately to cool.
  7. Squeeze excess water from spinach and cut into 2-inch lengths.
  8. Combine spinach with the sesame miso sauce and serve at room temperature or chilled.
