  • 1 pound long cut pasta
  • 1 bunch asparagus, ends trimmed
  • 1 cup basil pesto

  • 3/4 cup whole milk ricotta cheese
  • Zest and juice of 1 lemon
  • Salt and pepper


Instructions

  3. Boil salted water in a large pot; cook pasta as per package instructions, adding asparagus during the last 2-3 minutes.
  4. Reserve 1 cup of pasta cooking water before draining.
  5. In a mixing bowl, combine hot pasta and asparagus with pesto, jalapeño, ricotta, lemon zest, and juice. Mix well, adding reserved pasta water for creaminess. Season with salt and pepper.
  6. Serve topped with crispy turkey slices.
