  • 2 boneless, skinless chicken breasts, sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh oregano, chopped
  • ½ tsp dried thyme
  • ½ – 1 tsp red pepper flakes
  • Salt & freshly cracked black pepper to taste
  • 2 medium Yukon Gold potatoes, cut into ½-inch cubes
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ tsp dried oregano
  • 4 oz cremini mushrooms, finely chopped
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • ¼ cup fresh basil leaves
  • ¼ cup heavy cream
  • 2 tbsp grated Parmesan cheese
  • ¼ cup crumbled feta cheese
  • 1-2 tsp hot sauce
  • 1 tbsp lemon juice
  • Salt & freshly cracked black pepper to taste


Instructions

  1. In a bowl, toss chicken slices with olive oil, minced garlic, lemon juice, oregano, thyme, red pepper flakes, salt, and pepper.
  2. Heat a grill pan or outdoor grill to medium-high heat.
  3. Grill the chicken for 2-3 minutes per side until cooked through and lightly charred. Set aside.
  4. Preheat your oven to 425°F (220°C).
  5. In a bowl, combine potato cubes with olive oil, minced garlic, oregano, salt, and pepper.
  6. Spread potatoes in a single layer on a baking sheet.
  7. Roast for 20-25 minutes until golden brown and crispy; flip halfway through cooking.
  8. Heat olive oil in a skillet over medium heat.
  9. Add chopped mushrooms and minced garlic; cook until softened and liquid is released (about 5-7 minutes).
  10. Transfer the mushroom mixture to a food processor or blender.
  11. Add basil leaves, heavy cream, Parmesan cheese, crumbled feta cheese, hot sauce, and lemon juice; blend until smooth.
  12. Season with salt and pepper to taste.
  13. Arrange the crispy roasted garlic potatoes on plates or in bowls.
  14. Top with grilled spicy Greek garlic chicken slices.
  15. Drizzle generously with rich mushroom pesto cream blended with spicy whipped feta.
