Ingredients
- 1 pound lean ground beef (or turkey)
- 4 cups chicken or vegetable broth
- 2 cups marinara sauce
- 15 oz can diced tomatoes
- 8 lasagna noodles, broken into pieces
- ½ cup ricotta cheese
- 1 cup grated mozzarella cheese
- ½ cup freshly grated parmesan cheese
- 2 teaspoons olive oil (optional, for ground turkey)
- 1 small yellow onion, diced
- 5 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- ½ teaspoon onion powder
- ½ teaspoon oregano
- ¼ teaspoon dried rosemary
- ¼ teaspoon red pepper flakes (optional)
- 1 teaspoon balsamic vinegar
- salt and pepper to taste
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease.
- Transfer the cooked beef to the slow cooker and add diced onion, minced garlic, broth, marinara sauce, diced tomatoes, and seasonings. Stir to combine.
- Cover and cook on Low for 6–8 hours or High for 3–4 hours.
- In the last 30 minutes of cooking, stir in broken lasagna noodles.
- Once finished cooking, mix in balsamic vinegar and grated parmesan. Adjust seasoning with salt and pepper to taste before serving.
- Top each bowl with mozzarella, ricotta cheese, and fresh parsley.
