Ingredients

For the Beef and Vegetables

23 boneless beef chops, cubed
1/4 large onion, cubed
2 medium carrots, cut into large chunks
1 medium potato, cut into large chunks

For the Sauce

1 teaspoon oil
3 cups water
1/2 box Japanese curry sauce

To Serve

Cooked rice


Instructions

  • Prepare the Ingredients
    Cut the beef into cubes and chop the onion, carrots, and potato into large chunks.
  • Cook the Beef
    Heat the oil in a large pot over medium heat. Add the cubed beef and cook for 3–4 minutes until lightly browned.
  • Add the Vegetables
    Add the onion, carrots, and potato to the pot. Cook for another 2–3 minutes while stirring occasionally.
  • Add Water and Simmer
    Pour in the 3 cups of water and bring the mixture to a boil. Reduce the heat to medium-low and let it simmer for about 15 minutes until the vegetables begin to soften.
  • Add the Curry Sauce
    Break the Japanese curry sauce into pieces and stir it into the pot. Continue cooking for 5–10 minutes, stirring occasionally, until the sauce thickens and the beef becomes tender.
  • Serve
    Serve the hot beef curry over freshly cooked rice and enjoy.
