Ingredients

  • 1/4 cup shredded coconut
  • 1/2 cup old-fashioned rolled oats
  • 1 scoop vanilla protein powder
  • 1/2 cup creamy almond butter
  • 3 tablespoons pure maple syrup
  • 2 large soft medjool dates (pitted)
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon chia seeds
  • 1/2 cup chocolate chips
  • 1/2 teaspoon coconut oil
  • Flaky sea salt (for sprinkling on top)


Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Spread the shredded coconut on the baking sheet and toast it in the oven for 5 minutes until lightly golden. Let it cool.
  3. In a food processor, combine almond butter, maple syrup, dates, vanilla extract, oats, protein powder, and salt. Blend until smooth.
  4. In a mixing bowl, mix in 1/4 cup toasted coconut, chia seeds, and mini chocolate chips.
  5. Form the mixture into balls using about 1 tablespoon per ball.
  6. Melt chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals until smooth.
  7. Dip each ball's bottom into melted chocolate and drizzle with remaining chocolate before sprinkling with toasted coconut and sea salt.
  8. Refrigerate for about an hour until the chocolate hardens.
