  • 18 ounces sweetened red bean paste
  • 3 cups bread flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon instant yeast
  • 1 tablespoon milk powder (optional)
  • 1 cup warm whole milk
  • 1/3 cup warm heavy cream
  • 1 egg
  • 1 egg yolk (for wash)
  • 1 tablespoon sesame seeds


Instructions

  1. Combine bread flour, sugar, salt, instant yeast, and optional milk powder in a stand mixer. Add warm milk, heavy cream, and one egg. Knead until tacky; let rise for about 2 hours.
  2. Divide risen dough into 9 pieces; shape each into a ball. Flatten each ball into a circle and place red bean paste in the center. Seal them closed.
  3. Allow the buns to rise for another 30 minutes while preheating the oven to 350°F.
  4. Brush with egg yolk wash and sprinkle sesame seeds on top before baking for approximately 20 minutes until golden brown.
