  • 22 oz raspberries (fresh or frozen)
  • 1 cup unsalted butter
  • 1 lb mascarpone cheese
  • 2 cups raspberry curd (cooled or room temperature)
  • 2 packs ladyfingers
  • 1 cup whipping cream


Instructions

  1. Prepare Raspberry Curd: In a saucepan over medium heat, combine raspberries with lemon juice and sugar. Cook until berries break down; strain to remove seeds. Whisk egg yolks with sugar until thick, then mix in raspberry puree until thickened.
  2. Make Cream Mixture: Whip cold cream until soft peaks form. Combine mascarpone cheese with cooled raspberry curd and vanilla extract, then gently fold in whipped cream.
  3. Assemble Tiramisu: Briefly dip ladyfingers in lemon water mixture and layer them at the bottom of your dish. Spread half of the cream mixture over ladyfingers, repeat layering.
  4. Chill and Serve: Refrigerate for at least 4 hours before serving, garnishing with fresh raspberries and lemon slices.
