Ingredients

  • 1 sheet of puff pastry
  • Fresh or frozen raspberries
  • 250 ml milk
  • 20 g cornstarch
  • 2 egg yolks
  • 50 g sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon butter


Instructions

  1. Preheat your oven to 190 degrees Celsius.
  2. In a saucepan, whisk together milk, cornstarch, egg yolks, sugar, and vanilla extract. Heat over medium heat while stirring until thickened.
  3. Remove from heat and stir in butter until melted; allow to cool slightly.
  4. Roll out puff pastry and cut into eight rectangles.
  5. Place cooled custard in the center of each rectangle and top with raspberries.
  6. Fold over and seal the edges securely.
  7. Whisk one egg yolk with milk; brush this mixture on top of each pastry.
  8. Bake on a parchment-lined baking sheet for about 15–20 minutes until golden brown.
  9. Cool slightly before serving; dust with powdered sugar if desired.
