Ingredients
- 1/2 cup almond butter
- 1/2 cup organic pumpkin puree
- 2 Tbsp coconut oil, melted
- 2 Tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 cup plant-based vanilla protein powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup miniature dark chocolate chips
- 1/2 cup dark chocolate chips
- 2 Tbsp almond butter
Instructions
- Line an 8" x 4" loaf pan with parchment paper.
- In a mixing bowl, combine almond butter, pumpkin puree, melted coconut oil, maple syrup, and vanilla extract; mix until smooth.
- Add plant-based protein powder, cinnamon, and salt; stir until fully combined.
- Fold in dark chocolate chips.
- Press the mixture firmly into the prepared loaf pan and place in the freezer.
- Melt additional dark chocolate over low heat; mix in almond butter until smooth.
- Pour the chocolate topping over the base and smooth out.
- Chill in the refrigerator for at least one hour before cutting into bars.
