  • 4 tablespoons fresh orange juice
  • ½ cup fresh cilantro
  • 6 garlic cloves
  • 1 medium onion (quartered)
  • 1 teaspoon cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon ground coriander (optional)
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon pepper


Instructions

  1. In a mixing bowl, combine chipotle peppers with sauce, lime juice, orange juice, cilantro, garlic cloves, onion, cumin, oregano, coriander (if using), smoked paprika, salt, and pepper. Blend until smooth.
  2. Place chicken thighs into a resealable bag or shallow dish. Pour marinade over the chicken to coat evenly. Seal and refrigerate for at least 30 minutes or up to 2 hours.
  3. Heat olive oil in a cast iron skillet over medium-high heat. Remove excess marinade from the chicken and cook each side for about 5-7 minutes until fully cooked through (165°F internal temperature).
  4. Let the chicken rest for a few minutes before slicing. Serve warm in tacos, burritos, or salads.
