Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 6 cups chicken or vegetable broth
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 cup ditalini pasta
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. If using sausage, add and cook until browned; remove and set aside.
- Add chopped onion, carrots, and celery to the pot; sauté for 5–7 minutes until softened.
- Stir in minced garlic, oregano, basil, and red pepper flakes; cook for 1 minute until fragrant.
- Pour in broth and crushed tomatoes; add the cooked sausage (if using), cannellini beans, and kidney beans.
- Bring to a boil, then reduce heat and simmer for 15 minutes to meld flavors.
- Stir in ditalini pasta; cook according to package directions until al dente.
- Season with salt and pepper; serve hot garnished with fresh parsley.
