Ingredients
- 2 cups quick-cooking oats
- ½ cup honey
- ⅓ cup creamy peanut butter (natural)
- ⅓ cup chopped peanuts
- 6 oz dark chocolate (chopped)
- 2 teaspoons coconut oil
- Optional: 1-2 teaspoons water
- ¼ cup mini chocolate chips
Instructions
- Prepare your muffin pan by lining it with paper liners or using a silicone muffin pan.
- In a bowl, combine oats, honey, peanut butter, and chopped peanuts; mix well. If dry, add water. Press about 2 tablespoons of this mixture into each muffin cup.
- In a microwave-safe bowl, melt dark chocolate and coconut oil in short increments until smooth. Pour about 2 teaspoons of melted chocolate over each oat layer and freeze for 5 minutes.
- Combine additional peanut butter and coconut oil in another bowl; microwave briefly until mixed. Add on top of the chocolate layer and sprinkle mini chocolate chips.
