  • 1 pound boneless chicken (breast or thighs)
  • 3 tablespoons olive or coconut oil
  • 1 small/medium onion
  • 2 ribs celery
  • 1 carrot
  • 2 cloves garlic
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 2 teaspoons garam masala
  • 1 pinch cayenne pepper
  • 1/2 teaspoon salt
  • 1 tablespoon flour
  • 1 quart chicken broth
  • 1/2 cup uncooked white rice
  • 1 sweet-tart apple (like Granny Smith)
  • 14 ounces coconut milk


Instructions

  1. Heat 1 tablespoon of oil in a stock pot over medium heat.
  2. Toss chicken with spices and flour; brown in the pot and set aside.
  3. Add remaining oil; sauté onions, celery, carrots until soft. Add garlic and sauté briefly.
  4. Bloom spices in the pot before adding chicken broth; bring to a gentle boil.
  5. Stir in rice and cook for 15 minutes; add grated apple and reserved chicken for another 5 minutes.
  6. Lower heat and stir in coconut milk; season to taste.
