- 2 cans (5 ounces each) tuna, drained
- 1 cup cherry tomatoes, halved
- ½ cup cucumber, diced
- ½ cup bell pepper, diced
- ¼ cup red onion, finely chopped
- ½ cup Kalamata olives, pitted and sliced
- ½ cup feta cheese, crumbled
- ¼ cup fresh parsley, chopped
- 3 tablespoons extra virgin olive oil
- 2 tablespoons red apple vinegar
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and black pepper, to taste
Instructions
- Drain the tuna and place it in a mixing bowl.
- Add halved cherry tomatoes, diced cucumber and bell pepper, chopped red onion, sliced olives, crumbled feta cheese, and parsley to the bowl.
- In a separate bowl, whisk together olive oil, vinegar, lemon juice, Dijon mustard, minced garlic, salt, and pepper until well blended.
- Pour the dressing over the salad ingredients and gently toss to combine.
- Serve immediately or chill for about 30 minutes to enhance flavors.
