Description

Ingredients

  • 2 cans (5 ounces each) tuna, drained
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ½ cup bell pepper, diced
  • ¼ cup red onion, finely chopped
  • ½ cup Kalamata olives, pitted and sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red apple vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and black pepper, to taste


Instructions

  1. Drain the tuna and place it in a mixing bowl.
  2. Add halved cherry tomatoes, diced cucumber and bell pepper, chopped red onion, sliced olives, crumbled feta cheese, and parsley to the bowl.
  3. In a separate bowl, whisk together olive oil, vinegar, lemon juice, Dijon mustard, minced garlic, salt, and pepper until well blended.
  4. Pour the dressing over the salad ingredients and gently toss to combine.
  5. Serve immediately or chill for about 30 minutes to enhance flavors.
