  • 1 cup Feta Cheese (crumbled, or vegan feta)
  • 1 cup Pearled Couscous (or orzo/farro)
  • 1 cup Cherry Tomatoes (diced)
  • 1 cup Chopped Onions
  • 2 cloves Garlic (minced)
  • Fresh Herbs (parsley, thyme, oregano)
  • Olive Oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by washing, cutting off the tops, and removing seeds. Place upright in a baking dish.
  3. In a skillet over medium heat, cook ground beef with onions and garlic in olive oil until browned.
  4. Stir in cherry tomatoes, olives, couscous, and fresh herbs until well mixed.
  5. Fill each pepper generously with the mixture and bake covered for 30 minutes. Uncover, sprinkle feta cheese on top, and bake for an additional 15 minutes until golden.
