Ingredients

  • ½ tablespoon olive oil
  • 2 cups fresh spinach leaves
  • 4 slices hearty bread
  • 2 tablespoons softened butter
  • 6-8 pieces chopped sun-dried tomatoes
  • ½ cup crumbled feta cheese
  • ¼ cup shredded cheddar cheese
  • A pinch of salt
  • A pinch of oregano
  • A pinch of crushed chili flakes


Instructions

  1. Heat olive oil in a non-stick pan over medium heat and sauté spinach for 5-6 minutes until wilted. Season with salt and transfer to a plate.
  2. Butter one side of each slice of bread. Place two slices butter-side down in the pan.
  3. On each slice, layer chopped sun-dried tomatoes, half the feta, half the cheddar, sautéed spinach, and remaining cheeses. Sprinkle with oregano and chili flakes.
  4. Top with another slice of bread (butter-side up). Cook for about 5 minutes until golden brown. Flip carefully and cook the other side for an additional 5 minutes until toasted and gooey.
  5. Serve warm, optionally drizzled with honey or garnished with fresh herbs.
