Ingredients
- ½ tablespoon olive oil
- 2 cups fresh spinach leaves
- 4 slices hearty bread
- 2 tablespoons softened butter
- 6-8 pieces chopped sun-dried tomatoes
- ½ cup crumbled feta cheese
- ¼ cup shredded cheddar cheese
- A pinch of salt
- A pinch of oregano
- A pinch of crushed chili flakes
Instructions
- Heat olive oil in a non-stick pan over medium heat and sauté spinach for 5-6 minutes until wilted. Season with salt and transfer to a plate.
- Butter one side of each slice of bread. Place two slices butter-side down in the pan.
- On each slice, layer chopped sun-dried tomatoes, half the feta, half the cheddar, sautéed spinach, and remaining cheeses. Sprinkle with oregano and chili flakes.
- Top with another slice of bread (butter-side up). Cook for about 5 minutes until golden brown. Flip carefully and cook the other side for an additional 5 minutes until toasted and gooey.
