- 2 medium carrots (peeled & chopped finely)
- 1/2 medium onion (chopped)
- 1 tablespoon butter
- 1 tablespoon olive oil
- 3 cloves garlic (minced)
- 6 cups chicken broth
- 1.5 pounds uncooked chicken breasts
- 1 cup uncooked orzo
- 1 tablespoon lemon juice
- Salt & pepper to taste
Instructions
- In a large soup pot, sauté the celery, carrots, and onion with butter and olive oil over medium-high heat for 5-7 minutes until softened.
- Add minced garlic and cook for about 30 seconds before stirring in flour for another minute.
- Gradually pour in the chicken broth while stirring until the flour dissolves completely. Add chicken breasts and bring to a boil.
- Cover slightly, reduce heat, and simmer for 15 minutes until chicken is cooked through.
- Stir in uncooked orzo and cook for an additional 10 minutes until tender.
- Remove the chicken, chop it into pieces, return to the pot, add lemon juice, salt, and pepper to taste. Serve immediately.
