  • 1/2 cup granulated sugar
  • 2 teaspoons fresh lime zest
  • 2 and 1/2 tablespoons melted coconut oil
  • 1 large egg (room temperature)
  • 1/2 cup coconut milk
  • 1 cup confectioners' sugar (for the glaze)
  • 1 and 1/2 tablespoons key lime juice (for the glaze)
  • 1 teaspoon lime zest (for the glaze)

  • 1/2 cup shredded coconut, toasted (for garnish)
  • 2 teaspoons lime zest (for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan with coconut oil.
  2. In one bowl, whisk together flour, baking powder, salt, sugar, and lime zest.
  3. In another bowl, mix melted coconut oil, egg, and coconut milk until well combined.
  4. Combine the wet ingredients with the dry mixture using a rubber spatula until just mixed (lumps are okay).
  5. Fill each cavity in the donut pan about two-thirds full.
  6. Bake for approximately 10 minutes or until a toothpick inserted comes out clean.
  7. While cooling, prepare the glaze by whisking together confectioners' sugar, key lime juice, lime zest, and salt until smooth.
  8. Dip each donut in the glaze and sprinkle with toasted shredded coconut before serving.
