  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup cornstarch
  • 1 piece egg white
  • Vegetable oil
  • 2 tablespoons minced garlic
  • 1 tablespoon minced ginger
  • 2-3 dried red chilies or crushed red pepper flakes
  • 1/2 cup tomato ketchup
  • 2 tablespoons soy sauce
  • 1 tablespoon chili garlic sauce
  • 1 tablespoon vinegar
  • Optional garnishes: sliced green onions, toasted sesame seeds


Instructions

  1. Cut chicken into bite-sized pieces and coat with cornstarch, egg white, salt, and black pepper in a mixing bowl.
  2. Heat vegetable oil in a wok over medium-high heat; add sesame oil.
  3. Fry the coated chicken until golden brown (about 5–7 minutes). Remove and drain on paper towels.
  4. In the same wok, sauté garlic and ginger until fragrant. Add dried chilies.
  5. Mix in ketchup, soy sauce, chili garlic sauce, vinegar, sugar/honey, and water to create the sauce.
  6. Return the chicken to the wok; toss to coat evenly and cook for an additional 2–3 minutes.
  7. Serve hot, garnished with green onions and sesame seeds.
