  • 2 pounds chicken breast (cut into ¾-inch chunks)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 medium onion (small diced)
  • 2 teaspoons ginger (grated)
  • 3 garlic cloves (minced)
  • 3 ounces tomato paste
  • 3 ounces red curry paste
  • 1 can (14 ounces) coconut milk
  • 1 tablespoon garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander
  • 1 teaspoon curry powder
  • Salt and black pepper to taste
  • Fresh cilantro (for garnish)


Instructions

  1. In a large skillet over medium heat, melt butter with olive oil.
  2. Sauté the diced onion for 3-4 minutes until softened. Add ginger and garlic; cook for another 1-2 minutes.
  3. Stir in garam masala, chili powder, mustard seeds, coriander, and curry powder; toast for 1-2 minutes.
  4. Add chicken chunks; cook until browned on all sides (about 5-7 minutes).
  5. Mix in tomato paste and red curry paste; cook for 2-3 minutes.
  6. Season with salt and black pepper; pour in coconut milk and mix well.
  7. Bring to a simmer and cook for 15-20 minutes until the chicken is cooked through and the sauce thickens.
  8. Taste and adjust seasoning as desired before serving.
