  • 2 large eggs
  • 4 tbsp crumbled feta cheese
  • 1 handful pitted kalamata olives
  • 1/2 diced bell pepper
  • 1/2 thinly sliced scallion
  • 1 tbsp chopped fresh basil
  • Black pepper to taste


Instructions

  1. Heat olive oil in a non-stick frying pan over medium heat for about 30 seconds.
  2. Crack eggs into the pan and cook for 3-4 minutes until whites are set and yolks remain runny; cover if desired.
  3. While eggs are cooking, chop bell pepper and scallion, then crumble feta cheese if necessary.
  4. Once cooked, place eggs in a bowl and top with feta cheese, bell pepper, scallions, olives, and basil. Season with black pepper.
