Instructions
- Heat olive oil in a non-stick frying pan over medium heat for about 30 seconds.
- Crack eggs into the pan and cook for 3-4 minutes until whites are set and yolks remain runny; cover if desired.
- While eggs are cooking, chop bell pepper and scallion, then crumble feta cheese if necessary.
