Ingredients

Scale
  • 1 cup short-grain white rice
  • 1¼ cups water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • ½ tsp salt
  • 4 roasted nori sheets (sushi-grade)
  • 1 cup imitation crab or real crab meat
  • 1 ripe avocado, sliced
  • 1 small cucumber, cut into thin strips
  • 2 tbsp spicy mayo
  • 1 tbsp eel sauce
  • ½ cup toasted panko breadcrumbs or fried onions

Instructions

  1. Rinse the rice until the water runs clear. Cook with water in a rice cooker or stovetop.
  2. Combine vinegar, sugar, and salt in a saucepan until dissolved and fold into warm rice; let cool.
  3. Wrap your bamboo mat in plastic wrap and set up a bowl of vinegar-water mixture.
  4. Lay nori shiny side down on the mat; spread cooled rice evenly leaving a top edge empty.
  5. Flip nori so rice faces down; layer imitation crab, avocado slices, cucumber strips, and optional add-ins.
  6. Roll tightly using the bamboo mat while sealing the edge with water.
  7. Brush the top with spicy mayo or eel sauce; sprinkle panko breadcrumbs or fried onions.
  8. Slice into pieces using a wet sharp knife; serve with soy sauce, pickled ginger, and wasabi.
