  • ½ cup pumpkin puree
  • ⅓ cup pure maple syrup
  • ¼ cup coconut sugar
  • ½ cup melted coconut oil
  • ⅔ cup oat flour
  • ¾ cup rolled oats
  • 1 tbsp pumpkin pie spice
  • ½ tsp baking soda
  • ½ cup chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until well combined.
  3. Add oat flour, rolled oats, pumpkin pie spice, and baking soda to the wet mixture. Stir gently until just combined. Fold in chocolate chips.
  4. Pour the batter into the prepared pan and smooth out evenly. Optionally, sprinkle extra chocolate chips on top.
  5. Bake for 24–26 minutes or until a toothpick inserted comes out clean. Allow to cool for at least 10 minutes before cutting into bars.
