  • 2 tbsp extra-virgin olive oil
  • Juice of 1 lemon
  • 1 cup cooked rice or quinoa
  • 1 medium Persian cucumber
  • 8 cherry tomatoes
  • 10 kalamata olives
  • Tzatziki (store-bought or homemade)


Instructions
