  • 2 tablespoons unsulphured molasses
  • 2¼ cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon apple pie spice
  • ¾ teaspoon ground cloves
  • Icing and sprinkles for decorating


Instructions

  1. In a stand mixer bowl, beat together room temperature butter, both sugars, and salts until light and fluffy.
  2. Mix in the egg and molasses until well combined.
  3. In another bowl, whisk together flour, ground ginger, cinnamon, apple pie spice, and cloves.
  4. Gradually add dry ingredients to the wet mixture while mixing on low speed until just combined.
  5. Divide dough in half, roll out between parchment paper to about ⅜-inch thick, and refrigerate for at least 2 hours.
  6. Preheat oven to 350°F (175°C). Cut chilled dough into desired shapes and place on lined baking sheets.
  7. Bake for 10-12 minutes until edges are lightly golden. Cool before decorating.
