  • 1½ teaspoon dried oregano
  • ½ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 can butter beans
  • 1 small cucumber
  • 2 cups cherry tomatoes, halved
  • ½ green bell pepper, finely diced
  • ½ red onion, thinly sliced
  • ½ cup olives, pitted and halved
  • ¾ cup feta cheese, crumbled


Instructions

  1. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, mustard, honey, oregano, salt, and pepper until smooth.
  2. In another bowl, combine the drained butter beans with the dressing and let them marinate while you prepare the vegetables.
  3. Dice the cucumber and green bell pepper, halve the cherry tomatoes, and thinly slice the red onion. Add these vegetables along with olives and feta to a large mixing bowl.
