- 1 can butter beans
- 1 small cucumber
- 2 cups cherry tomatoes, halved
- ½ green bell pepper, finely diced
- ½ red onion, thinly sliced
- ½ cup olives, pitted and halved
- ¾ cup feta cheese, crumbled
Instructions
- In a small bowl, whisk together the olive oil, lemon juice, lemon zest, mustard, honey, oregano, salt, and pepper until smooth.
