  • 5 tbsp unsalted butter
  • ½ onion (chopped)
  • ⅓ cup all-purpose flour
  • 2 cups chicken stock
  • 1 celery stalk (finely diced)
  • 2½ cups broccoli (chopped into bite-sized pieces)
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste


Instructions

  1. Melt the butter in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
  2. Whisk in the flour and cook for 2 minutes to eliminate the raw flour taste.
  3. Gradually stir in the chicken stock, seasoning with salt and pepper until smooth.
  4. Add the celery and broccoli, bring to a boil, then reduce heat to medium-low and simmer until veggies are tender, about 15 minutes.
  5. Stir in the milk and continue simmering until slightly thickened, about 2-3 minutes.
  6. Remove from heat and gradually stir in shredded cheddar until melted and creamy.
  7. Adjust seasoning as needed and serve hot.
