Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, finely diced
  • 1 green or red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 1/2 cups long-grain white rice
  • 3 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon thyme
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped green onions

Instructions

  1. Heat olive oil in a large skillet over medium heat. Cook ground beef until browned, breaking it apart as it cooks.
  2. Add diced onion, bell pepper, and minced garlic; sauté for 3-5 minutes until softened.
  3. Stir in Cajun seasoning, thyme, paprika, salt, and black pepper; cook for another minute.
  4. Add the rice to the skillet and stir well to coat.
  5. Pour in chicken broth; bring to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes until rice is cooked and liquid is absorbed.
  6. Remove from heat and let sit for 5 minutes before fluffing with a fork.
  7. Garnish with chopped green onions before serving.
