Description

Delicious Chicken Enchiladas are a hearty and flavorful meal that will please any crowd. These enchiladas feature tender, shredded chicken wrapped in soft flour tortillas and smothered in zesty enchilada sauce, all topped with melted cheese. Perfect for any occasion, from family dinners to cozy evenings at home, they are quick to prepare and can be customized with your favorite toppings or additional ingredients.

  • 2 cups cooked and shredded chicken
  • 1 can red enchilada sauce (10 oz)
  • 2 cups shredded Monterey Jack cheese
  • 8 flour tortillas
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish
  • Sour cream for serving


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, heat the vegetable oil. Sauté the chopped onion and minced garlic until softened.
  3. Add the shredded chicken to the skillet along with cumin, chili powder, salt, and pepper. Mix well and cook for an additional 3–5 minutes.
  4. Pour a small amount of enchilada sauce into the bottom of a baking dish.
  5. Take a tortilla, fill it with the chicken mixture and cheese, roll it up tightly, and place seam side down in the baking dish. Repeat until all tortillas are filled.
  6. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  7. Cover with foil and bake for 20–25 minutes; remove foil and bake an additional 5–10 minutes until cheese is bubbly.
  8. Let cool slightly before serving garnished with cilantro and accompanied by sour cream.
