Ingredients

  • 3 ½ cups peeled fresh ginger
  • 4 cups water
  • 5 cups white sugar
  • 1 (3 oz) pouch liquid pectin
  • 5 half pint canning jars with lids and rings


Instructions

  1. Cut the ginger in half; cube one half and shred the other.
  2. In a large pot, combine cubed ginger and water; simmer for 1 hour and 15 minutes. Drain mixture, reserving ½ cup of the liquid.
  3. Chill the cooked ginger in the fridge for 4 hours.
  4. In the same pot, mix chilled ginger, reserved water, and sugar; bring to a boil for exactly 1 minute.
  5. Stir in pectin; simmer for an additional 7 minutes while skimming off any foam.
  6. Sterilize canning jars by boiling them in water.
  7. Fill each jar with hot marmalade, leaving about ¼ inch of space at the top; remove air bubbles and wipe rims before sealing.
  8. Process filled jars in a boiling water bath for about 15 minutes.
  9. Cool completely at room temperature; check seals before storing.
