  • 25 g Fresh Yeast (or active dry yeast)
  • 3 medium Eggs (or flax eggs for vegan option)
  • 100 g Unsalted Butter (or vegan butter)
  • 500 ml Whole Milk (or almond/soy milk)
  • 1 Vanilla Pod (or 1 tsp vanilla extract)
  • 4 large Egg Yolks (or cornstarch for egg-free custard)
  • 30 g Cornstarch
  • 100 g Mini Chocolate Chips


Instructions

  1. In a mixing bowl, combine flour, sugar, and salt. Dissolve yeast in lukewarm milk until frothy.
  2. Mix the yeast mixture into the dry ingredients along with eggs and melted butter. Combine until smooth.
  3. Shape dough into a ball, cover it, and let rise in a warm place for about 1 hour.
  4. For the custard, heat milk with the vanilla pod until just below boiling. In another bowl, whisk egg yolks with sugar and cornstarch.
  5. Gradually mix hot milk into yolk mixture, then return to saucepan over low heat until thickened.
  6. Roll out risen dough into rectangles; add custard and chocolate chips before folding into rolls.
  7. Preheat oven to 190°C (375°F) and bake brioches for about 12 minutes or until golden brown.
