  • ⅓ cup granulated sugar
  • 1 ½ cups semisweet chocolate chips
  • ½ cup hot water
  • 1 tbsp espresso powder
  • 2 large eggs (room temperature)
  • 1 cup sour cream (room temperature)
  • ½ cup neutral oil (vegetable or canola)


Instructions

  1. Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. In a stand mixer, beat the eggs until stiff peaks form, gradually adding sugars until glossy.
  3. Sift together flour, cocoa powder, baking powder, baking soda, and salt in a separate bowl.
  4. Gently fold the dry ingredients into the meringue until just combined.
  5. Pipe small circles onto prepared sheets and let rest for about 30 minutes until a skin forms.
  6. Bake for 15–20 minutes or until they lift easily from parchment. Cool completely before filling.
  7. Melt chocolate chips with hot water and espresso powder for filling; cool slightly before assembling macarons.
