  • 1 cup strawberries, hulled and sliced
  • 1 large English cucumber, thinly sliced
  • 2 tbsp chopped fresh mint or basil
  • Optional: 1/4 cup crumbled feta or goat cheese
  • Optional: 2 tbsp slivered almonds or sunflower seeds
  • 1 tbsp fresh lemon juice
  • 1 tsp honey
  • 2 tbsp olive oil
  • Salt and black pepper, to taste


Instructions

  1. Wash and dry the strawberries and cucumber. Hull the strawberries and slice them; thinly slice the cucumber into rounds.
  2. In a small bowl, whisk together fresh lemon juice, honey, olive oil, salt, and pepper to make the dressing.
  3. In a large mixing bowl, combine cucumbers, strawberries, fresh herbs, and cheese if desired.
  4. Drizzle half of the dressing over the salad and gently toss to coat all ingredients.
  5. Transfer to a serving platter, garnish with nuts/seeds and additional herbs if using; drizzle with remaining dressing before serving.
