  • 15 oz can whole kernel corn (drained)
  • 15 oz can diced tomatoes (undrained)
  • 2 cups beef broth
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 10 oz bag frozen mixed vegetables (green beans, carrots, peas, and corn)
  • 2 teaspoons freshly chopped parsley (for garnish)


Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, crumbling it as it cooks. Add the diced onions and minced garlic; cook for an additional 2 minutes.
  2. Transfer the cooked beef mixture to a slow cooker. Add all remaining ingredients and stir well to combine.
  3. Cover and cook on high for 3-4 hours or low for 6-8 hours until vegetables are tender.
  4. Serve warm, garnished with freshly chopped parsley.
