Ingredients
- 1 1/2 pounds boneless skinless chicken breasts
- 2 cans (15 oz each) cannellini beans
- 1 cup frozen corn
- 2 cups low sodium chicken broth
- 1/2 cup buffalo sauce
- 1 tbsp chili powder
- 2 teaspoons ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 – 10 ounce cans fire roasted tomatoes and green chiles
- 4 oz cream cheese (room temperature)
- 4 oz cottage cheese (blended)
Instructions
- Place chicken breasts, beans, corn, tomatoes, spices, and broth in the slow cooker.
- Stir well and cover. Cook on low for 4-6 hours or high for 3-4 hours until chicken is cooked through.
- Shred the chicken using forks once cooked.
- Mix in cream cheese until smooth, then return shredded chicken to the pot.
- Let it cook on low for another 30 minutes to meld flavors.
- Stir in blended cottage cheese before serving.
