  • 34 lb chuck roast
  • 2 tablespoons olive oil (for browning, optional)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
  • 2 bay leaves
  • 3 large yellow onions, thinly sliced (about 4 cups)
  • 1 large sweet onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon brown sugar
  • 2 tablespoons unsalted butter
  • 1 1/2 cups low-sodium beef broth
  • 1/2 cup dry apple vinegar (or more broth)
  • 2 tablespoons cornstarch + 3 tablespoons cold water (for thickening, optional)
  • Chopped fresh parsley (for garnish)


Instructions

  1. Prepare the onions and garlic by slicing the onions into thin rings and mincing the garlic.
  2. In your slow cooker on high heat, combine butter, onions, garlic, brown sugar, and balsamic vinegar. Stir well and cook for 20–30 minutes until softened.
  3. Season the chuck roast with salt and pepper. Optionally sear it in olive oil until browned.
  4. Place the caramelized onions at the bottom of the crock pot and nestle the roast on top. Add thyme and bay leaves.
  5. Pour in beef broth and apple vinegar until the roast is partially submerged.
  6. Cook on low for 8–9 hours or high for 5–6 hours until fork-tender.
  7. If desired, thicken gravy with cornstarch mixed with water during the last few minutes of cooking.
