  • ½ cup shredded cheddar cheese

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper (to taste)
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • ¼ tsp dried thyme
  • Fresh parsley (chopped)


Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a skillet; cook chicken until golden brown on both sides (5-7 minutes). Set aside.
  2. In the same skillet, toast rice for 2 minutes. Add chicken broth and salt; bring to a boil. Reduce heat to low and cover; simmer until rice is tender (18-20 minutes).
  3. In another saucepan, melt butter; whisk in flour until smooth. Gradually whisk in milk and additional broth until thickened (about 5 minutes). Stir in garlic powder, thyme, cheddar cheese, and Parmesan until melted.
  4. Combine cooked chicken with rice; pour sauce over the mixture and stir gently. Cook together briefly until heated through.
  5. Serve warm garnished with chopped fresh parsley.
