  • 1 large yellow onion, chopped (about 1 cup)
  • 2 medium carrots, peeled and diced into ¼-inch pieces (about 1 cup)
  • 2 teaspoons garlic, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup whole milk
  • 2 tablespoons Worcestershire sauce (non-alcoholic)
  • 2 cans (15 ounces each) Great Northern white beans, rinsed and drained
  • Fresh parsley, for garnish


Instructions

  1. In a large pot, heat vegetable oil over medium-high heat. Add sliced chicken sausage and cook until browned, about 7-9 minutes. Remove and set aside.
  2. In the same pot, melt butter over medium heat. Add chopped onion, diced carrots, minced garlic, salt, and pepper; sauté until onions are translucent.
  3. Sprinkle flour over vegetables, stirring well to combine for 1 minute.
  4. Pour in chicken broth, whole milk, and Worcestershire sauce; stir to combine and bring to a simmer.
  5. Return the browned sausage to the pot along with rinsed beans.
  6. Reduce heat to medium-low and simmer for 15-20 minutes until thickened.
