  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • pounds mushrooms (cremini, shiitake, or baby bella), sliced
  • ¼ cup dry white apple vinegar
  • ⅓ cup all-purpose flour
  • 1 cube chicken bouillon
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Fresh parsley for garnish


Instructions

  1. In a Dutch oven, melt butter with olive oil over medium heat. Sauté the onion and garlic until the onion is translucent.
  2. Add sliced mushrooms and cook until browned and liquid has evaporated.
  3. Stir in apple vinegar and let it evaporate slightly before adding flour; mix well.
  4. Crumble chicken bouillon into the mixture; season with salt and pepper, then add thyme and vegetable broth. Bring to boil and simmer for 10 minutes.
  5. Reduce heat to low; stir in heavy cream and simmer for an additional 2 minutes.
  6. Serve hot, garnished with fresh parsley.
