- 380 g all-purpose flour
- 100 g almond flour

- 230 g unsalted butter (softened)
- 100 g granulated sugar
- 50 g brown sugar
- 2 large eggs (room temperature)
- 1 teaspoon vanilla extract
- 100 g dried cranberries (finely chopped)
- Powdered sugar (for sprinkling)
Instructions
- Prepare the cranberry jam by cooking cranberries, granulated sugar, and water over medium heat until thickened. Cool completely.
- In a large bowl, cream softened butter with sugars until fluffy. Add eggs and vanilla, mixing well.
- In another bowl, whisk together flours, salt, and dried cranberries; gradually combine with wet ingredients.
- Chill dough for at least 30 minutes before rolling out to about 1/8 inch thick.
- Cut out shapes using cookie cutters and bake at 350°F (175°C) for 12-15 minutes until edges are golden.
- Once cooled, sandwich cookies with cranberry jam and dust with powdered sugar.
