  • 300 g cranberries (fresh or frozen)
  • 150 g granulated sugar
  • 150 g water
  • 380 g all-purpose flour
  • 100 g almond flour
  • 1/2 teaspoon salt
  • 230 g unsalted butter (softened)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 100 g dried cranberries (finely chopped)
  • Powdered sugar (for sprinkling)


Instructions

  1. Prepare the cranberry jam by cooking cranberries, granulated sugar, and water over medium heat until thickened. Cool completely.
  2. In a large bowl, cream softened butter with sugars until fluffy. Add eggs and vanilla, mixing well.
  3. In another bowl, whisk together flours, salt, and dried cranberries; gradually combine with wet ingredients.
  4. Chill dough for at least 30 minutes before rolling out to about 1/8 inch thick.
  5. Cut out shapes using cookie cutters and bake at 350°F (175°C) for 12-15 minutes until edges are golden.
  6. Once cooled, sandwich cookies with cranberry jam and dust with powdered sugar.
